The Best Steak in the Faringdon Area: How we prepare it and a special offer for you
Dear Friends,
I’d like to share a bit about how we prepare our steaks here at the restaurant. We've gained a reputation for serving some of the best steaks in the Faringdon area, and it’s not just our claim – it's what we hear from you, our valued guests.
how to choose a steak
The key to a great steak starts with the quality of the meat, and that’s something we take seriously. We work with local farmers who raise their cattle with care and dedication. Knowing where our beef comes from is crucial, as it directly impacts the flavor and tenderness of every steak we serve. Without our farmers, we wouldn’t be able to offer you the high quality meat which we are known for.
We update the steaks on our regular menu frequently, and once a month, we host the highly popular 'STEAK WEEKEND EXTRAVAGANZA,' offering a variety of steaks to satisfy different preferences. Here's a quick overview of some customer favorites, along with a bit of insight into each cut:
• Ribeye: Known for its rich marbling, the ribeye has deep flavor and tenderness. What many people don’t know is that the ribeye comes from the same part of the cow as prime rib, which is why it has that beautiful, buttery texture. It’s sometimes called the “King of Steaks” because it offers the perfect balance of flavor and tenderness.
• Sirloin: Sirloin is a popular choice because it offers a great balance between tenderness and flavor at a more affordable price point than cuts like filet mignon. What sets the sirloin apart is that it comes from a part of the cow that gets more exercise, which gives it a firmer texture but still plenty of flavor. Interestingly, the sirloin is divided into two parts: the top sirloin, which is more tender, and the bottom sirloin, which is a bit chewier but just as tasty.
• Filet Mignon: As the most tender cut of beef, filet mignon is prized for its delicate texture, but did you know it’s also one of the smallest cuts? It comes from the tenderloin, a small, muscle that does very little work, which is why it’s so soft. However, because of its low fat content, it has a more subtle flavor, which is why many people enjoy it with a sauce or butter on top.
• Onglet (Hanger Steak): Onglet, often called the “butcher’s steak,” is a cut that butchers used to keep for themselves because of its exceptional flavor. It’s a cut from the diaphragm, which means it’s packed with a rich, beefy taste that many consider one of the best-kept secrets in steak. However, because it’s only one per cow, it’s often in limited supply compared to other cuts.
• Rump Steak: Rump steak is a leaner cut with a stronger beef flavor, but many people don’t realize it’s also one of the most affordable cuts that still delivers excellent taste. It comes from the hindquarters of the cow, an area that does more work, so the meat is firm and full of flavor. While it may be a little chewier, it’s a favorite for those who appreciate a bold beefy taste.
marbling & colour
When choosing the perfect cut, I always look for two things: marbling and color. Marbling—the thin streaks of fat running through the meat—ensures the steak will be juicy and flavorful, while the rich pinkish-red tone is a sign of freshness and quality. These visual cues are what help us choose only the best steaks for our menu.
