Using a sharp knife cut cylinder slices 1.5-2cm (1/2-3/4in) thick. Put slices evenly spread on the tray lined with the baking parchment leaving 3-5cm (1-2in) between them.
Bake in the middle of the oven for 18 minutes or until they are golden brown.

Notes:
These shortbread biscuits are made without eggs. This makes the texture very crunchy and crumbly. They are best to enjoy fresh with tea or coffee but will last for up to a week in airtight container. You can make these using the cheapest ingredients from supermarket and they will taste lovely but if you spend bit more and buy good quality butter, flour and use real vanilla they will be out of this world!
